Welcome to our “Celebrity Chef” column.  It is our pleasure to introduce you to Amanda Brown, our next “Celebrity Chef”, in our “Busy Mom” series. Amanda has graciously offered to share herrecipe for Easy Crock-Pot Roast which takes five minutes to put together in the morning.  And when it is time for supper - voila- all you have to do is lift the lid and serve.

Amanda is an optometrist and her husband Steve Sickle is president of the Brant County Federation of Agriculture and you guessed it, a beef farmer.     

Amanda likes to cook, but like many busy Moms is often pressed for time. Add in Steve’s unpredictable schedule and she is always on the lookout for quick and easy recipes.  “I always try to make a good meal on the days I am home,” she adds “but I don’t want to spend time in the kitchen cleaning up”.

This is one of her favourite recipes as it’s quick to put together and there is always left over roast beef for another meal during the week.  And she smiles, adding “Our own beef - that’s the key ingredient, using homegrown local beef”. 

She likes to cook the roast in the slow cooker rather than in the oven as “it’s easy, and you don’t have to watch it. It’s a lot simpler.”
