The Brant County Federation of Agriculture (BCFA) is pleased to introduce you to our next “Celebrity Chef”, Dr. Rene Van Acker. Rene graciously offered to share his recipe for carrot cake, and his sister-in-law Jayne offered to make it. She did a wonderful job of decorating it as you can see.
It’s easy to make, tastes great and will be a hit whenever you serve it, even if your cake decorating skills are a bit rusty.
Rene was born and raised on a tobacco farm in Burford Township. He is an Associate Dean at the Ontario Agricultural College at the University of Guelph, and was the guest speaker at Brant County Federation of Agriculture’s annual meeting in September.
The family farm is now home to Rene’s brother Pat and his wife Jayne and their three sons, Marc, Matthew and Paul. They grow ginseng, early greenhouse market crops and raspberries. Jayne operates the fruit and vegetable market, The Stand, in Burford.
